Teaching Healthy Southern Living at a Girls Academy

Girls who attend the The Ellis Academy (a private school for girls)  now know what Traffic Light Eating is and how to cook healthy southern foods thanks to Certified L.E.A.N. Coach, Frieda Houck.

Freida Houck is a Certified L.E.A.N. health coach and enjoys sharing good nutrition with families in her hometown of Huntsville, Alabama. She has been formally working to help families improve their nutrition for the last 6 years, but has always enjoyed learning more about how food affects the body, and has been providing her family with a whole foods diet for the last 16 years.

Over the past several years, Frieda has been teaching healthy eating and living skills to various groups of girls at The Ellis Academy. She was first contacted by the director of the school, Diane Ellis Miles, to teach the L.E.A.N. Start program to the students at the school. “From then on, I began hearing the girls ‘monitoring’ their own (and one another’s) red light, green light, and yellow light foods!” stated Diane Miles.

The reviews of the course were so strong, that following that initial course, Frieda has continued teaching at the academy in their Culinary Arts program. Last year, Freida taught “Meals from Around the World” to the 6th-8th graders.  This year, Freida is teaching “Healthy Southern and Tasty Northern Foods” to girls in the 3rd through 5th grades. Next year she is scheduled to teach Gourmet Cooking to the 9th and 10th grades.

It has been delightful to see girls aged 7 and up learn to cook real food, from basic ingredients, sit at a nicely set table and enjoy both the food and conversation as they eat!” shared Coach Freida.

Frieda became interested in health and nutrition when she was pregnant with her oldest child. Her Biology degree furthered her understanding  about how what we eat affects our bodies, our emotions and our immunity. As she continued to have more children, she realized how important her Lifestyle, Exercise, Attitude and Nutrition choices were, both for her born and unborn children. “I really love the way the Dr. Sears’ L.E.A.N. Program makes living healthy really simple and something that anyone can do at any phase in their life.” said Frieda. “I love that the changes are ones that are encouraging, practical and will help me further develop a sustainable healthy lifestyle for my family.”

Frieda’s strong desire to meet families where they are at and educate them on simple, effective ways they can live healthier, happier lives translates into everything she does. This busy mom has found time to appear on several radio and television shows, teach nutrition at the girls academy, serve in her local church, and run her website, www.momsaideatyourveggies.com, all in an effort to help families in her area.
